Specially created for the most wonderful season of the year, the Kaya & Pineapple Log Cake is the inspired creation of Tai Chien Lin, Executive Pastry Chef of Raffles Hotel Singapore. Comprising of coconut dacquoise, dreamy kaya Chantilly, pineapple compote and coconut crumble, this classy festive creation cleverly combines French pastry techniques with Asian flavour sensibilities, including a distinctively local favourite- kaya. Chef Tai deftly incorporates the Raffles Kaya, one of the most popular products of the Raffles Boutique, into the Chantilly cream which beautifully enhances the coconut notes in the dacquoise and crumble.
