Exclusively from 7 to 13 July 2025, our fourth hawker guest, Jeffry Sie from Bandung, Indonesia is back by popular demand to present you his rendition of Gudeg! Enjoy in our lushly landscaped setting of Raffles Courtyard or in the comfort of your home via Raffles Grab & Go.
Gudeg spotlights a hearty slow-cooked stew carefully prepared with young unripe jackfruit, simmered for hours with over 25 spices and ingredients such as blue ginger, lemongrass, shallots, garlic, candlenut, coriander seeds, Indonesian bay leaves,
palm sugar and coconut milk. It is covered in teak leaves during the simmering process, yielding a tantalising amalgamation of aromatic sweetness and spice.
The scrumptious stew is served atop fragrant jasmine rice, accompanied with succulent braised-then-fried chicken, hard-boiled egg, beef skin puffs that have been cooked in soto, a traditional Indonesian soup, and tofu – an authentic culinary experience that will delight both the local community and visitors to Singapore.
